How to change Directdraw settings ?

I would like to know how to change the directdraw settings like 'YUV flipping', 'RGB flipping', 'YUV overlays', 'RGB overlays', 'YUV offscreen', 'RGB offscreen', 'DDraw Primary', 'DCI primary'. I have no prior experience in Directdraw.
