Merry Christmas!
It comes down to two issues.
One is a concern about showing proper respect to religious minorities in the US. Some here refer to that as "political correctness". I find that term itself to be condescending. There might well be times when the majority's worries about "playing fair" are pressed beyond reason, but it seems to happen infrequently.
The other comes about from some in the majority playing the part of an oppressed minority. The issues are framed in that way with the hope it will further those legal arguments which seek to broaden their rights. For example, wishing to have their religious symbols displayed on public property. Some claim to recognize no wall of separation regarding church and state.
I think the overwhelming majority of Americans simply wish to be inclusive.
Merry Christmas, Happy Holidays, and an early wish of Happy Norooz to all.
